Mojito Slush

As the warmer weather approaches, keep this cocktail in your repertoire. Imagine biting into a cocktail that bursts with the cool, invigorating flavor of fresh mint—it’s truly a game changer! Ingredients

  • 1 cup sugar
  • 1 cup water
  • ½ cup lime juice (frozen lime juice concentrate)
  • ¼ cup fresh mint leaves
  • 2 limes, zested
  • ½ cup of white or light rum
  • 6 – 8 cups of crushed ice, depending on how slushy you want it
  • Mint sprigs and lime wedges for garnish

Process

Simple Syrup

  1. In a saucepan over medium heat, combine the sugar and water. Bring to a boil, stirring until sugar is dissolved and the syrup coats the back of a spoon.
  2. Pour into a jar and refrigerate for 30 minutes or until cool.

Beverage

  1. In a blender combine the cooled syrup, lime juice, mint leaves, lime zest and rum and blend until smooth.
  2. Add crushed ice to the blender and blend until the mixture reaches a slushy consistency.
  3. Spoon into glasses and garnish with a sprig of mint and slice of lime. Serve immediately.
