Citrus Salmon

Delicious and simple, the tangy marinade in this recipe offers a perfect balance for salmon’s oily flesh.

Ingredients

  • Zest and juice of 2 oranges
  • ½ cup fresh chopped parsley
  • 2 tablespoons chopped garlic
  • Juice of 1 lime
  • 1 cup extra virgin olive oil
  • 6 (6-ounce) boneless salmon steaks

Directions

Preheat oven to 400 degrees

  1. Grease a roasting pan or baking dish (9 x 13 inches) with cooking spray
  2. In a bowl, combine orange zest, parsley, garlic, lime juice and olive oil
  3. Arrange salmon in the prepared pan
  4. Liberally brush on citrus-parsley mixture
  5. Let stand for 10 minutes
  6. Pour orange juice over the top of fish and bake for 10 minutes

Salmon should be tender and flaky when finished.
