Ingredients
- 1-pound fresh asparagus
- 3 tablespoons olive oil
- ¼ cup Seasoned Rice Vinegar
- 2 cloves of fresh grated or pressed garlic
- ¼ teaspoon red pepper flakes or Korean Red Pepper powder
- 1 3-oz package of prosciutto
Process
- Clean the asparagus and trim off the tough ends.
- Place the asparagus in a gallon-size zip-lock bag.
- Add the olive oil, seasoned rice vinegar, garlic, and red pepper. Do not add the prosciutto yet.
- Seal the bag and marinate in the refrigerator for at least 1 hour.
- When ready to serve, slice the prosciutto into thin strips.
- Remove the asparagus from the marinade. Do not rinse.
- Wrap each spear with a thin strip of prosciutto, starting at the base and winding toward the tip.
- Arrange on a platter and refrigerate until ready to serve.
