Ingredients

  • 1-pound fresh asparagus
  • 3 tablespoons olive oil
  • ¼ cup Seasoned Rice Vinegar
  • 2 cloves of fresh grated or pressed garlic
  • ¼ teaspoon red pepper flakes or Korean Red Pepper powder
  • 1 3-oz package of prosciutto

Process

  1. Clean the asparagus and trim off the tough ends.
  2. Place the asparagus in a gallon-size zip-lock bag.
  3. Add the olive oil, seasoned rice vinegar, garlic, and red pepper. Do not add the prosciutto yet.
  4. Seal the bag and marinate in the refrigerator for at least 1 hour.
  5. When ready to serve, slice the prosciutto into thin strips.
  6. Remove the asparagus from the marinade. Do not rinse.
  7. Wrap each spear with a thin strip of prosciutto, starting at the base and winding toward the tip.
  8. Arrange on a platter and refrigerate until ready to serve.
