Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • ½ cup almond flour or rolled oats
  • ½ teaspoon baking powder
  • Pinch of salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon of nutmeg
  • 1 teaspoon vanilla extract
  • 3 tablespoons honey or maple syrup (optional)
  • 1 apple, peeled and finely chopped

Process

  1. Preheat oven to 350°F. (175°C)
  2. Grease 2 2-cup (472 ML) ramekins
  3. Whisk together cottage cheese, eggs, vanilla, and maple syrup until smooth.
  4. Add almond flour, or oats, cinnamon, baking powder, and salt.
  5. Stir in the apples.
  6. Bake for 30 – 40 minutes or until set and lightly golden. The batter should be firm to the touch in the center.
  7. Cool and Serve

  • ¼ cup chopped Walnuts
  • ¼ cup blueberries

Ingredients

  • 10 eggs
  • 1 medium sweet onion, sliced thin (a mandolin slicer is a perfect tool for this job)
  • 1 cup Bloody Mary Mix
  • 1 cup white distilled vinegar
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon minced Garlic
  • 1 tablespoon hot sauce
  • 1 tablespoon celery seed
  • 1 teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • 2 Bay leaves
  • 1 Jalapeño pepper, sliced
  • 10 drops red food coloring (optional) try ¼ cup beet juice

Process

  1. Place eggs in a large pot of water making sure they are fully submerged. Bring water to a boil, reduce heat and simmer for 11 minutes.
  2. First, drain the hot water and put the eggs in cold water. When they are cool enough to handle, peel off the shells. Do not refrigerate, shells are easier to peel when warm.
  3. Wearing gloves, slice the jalapeño peppers about ¼ inch thick. Leave the seeds if you want more heat.
  4. In a large pot, combine the Bloody Mary Mix, white vinegar, Worcestershire sauce, hot sauce, garlic, celery seed, red pepper flakes, salt, bay leaves and food coloring.  
  5. Bring mixture to a boil, stirring occasionally until the mixture is fully incorporated and salt is dissolved. Reduce heat to low. Simmer for about 5 minutes.
  6. Pour the hot brine over the eggs to fill the jar up to 1/4-inch headspace.
  7. Let sit for 30 minutes before adding the lid.
  8. Secure the lid and place in the refrigerator when eggs cool to room temperature. 

Will last 3 to 4 months in the refrigerator. Let eggs pickle for 7 days to develop flavor.

How to Make Delicious Marshmallow Creme at Home

Marshmallow creme is an American food item. It is a very sweet, spreadable, marshmallow-like confection. Marshmallow creme and peanut butter are used to create a Fluffernutter sandwich. In addition, marshmallow creme and Nutella can be spread on graham crackers to emulate s’ mores – a tasty fireside treat.  I have also used Marshmallow fluff to fill whoopee pies and icing chocolate cake.  You can take a pastry tip and fill cupcakes with marshmallow fluff for a yummy, sweet treat.  Or take a spoon and just dig in.  Enjoy

Ingredients

  • 3 large egg whites 
  • 1/2 teaspoon cream of tarter 
  • 2 tablespoons sugar 
  • 3/4 cup golden corn syrup 
  • 2/3 cup granulated sugar 
  • 1/2 teaspoon vanilla extract

Directions

  1. In a heavy duty mixer, with whisk attachment, beat the egg whites and cream of tartar until foamy. 
  2. Add 2 tablespoons of sugar and beat until soft peaks form, set aside. 
  3. Meanwhile, in a saucepan, add 1/3 cup water, corn syrup, and 2/3 cup sugar. 
  4. Cook over medium heat while stirring until the mixture reaches firm ball stage (instructions below) or 248 degrees on a candy thermometer. This step will take about 15 minutes. 

(To test for firm ball stage:  Fill a glass with cold water and drop a small spoonful of the mixture into the cold water. Remove the mixture from the cold water and it should hold its shape, but quickly flatten)

  1. Once the corn syrup mixture has reached firm ball stage, turn the mixer onto medium and in a slow steady stream; pour the corn syrup mixture into the beaten egg whites. 
  2. Once all of the corn syrup mixture has been added, beat on high for 5 minutes
  3. Add vanilla extract and beat on high 1 minute 
  4. Store in a tightly sealed container
