Serve them with eggs at breakfast, tuck them into a sandwich for lunch, or pair them with roasted vegetables for a satisfying dinner- a simple, tasty way to make everyday meals feel special.

Ingredients

  • 2 tablespoons of olive or avocado oil
  • 1 small yellow onion, chopped
  • 1 teaspoon kosher salt
  • 1 pound ground turkey or ground chicken thighs
  • 2 cups fresh spinach, chopped
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground sage
  • Chopped fresh parsley for garnish

Process

  1. Heat 1 tablespoon of oil in a medium pan over medium-low heat. Add the onion and a pinch of salt and cook, stirring occasionally, until the onion is very soft, about 10 minutes. Set aside and let cool.
  2. In a large bowl, combine the ground turkey or chicken, spinach, 1 teaspoon salt, thyme, garlic powder, and sage. Add the cooked onions. Form the mixture into 3-inch patties.
  3. Heat the remaining 1 tablespoon of oil in a 10-inch pan over medium heat. Add the sausages in batches if needed and cook until the bottoms are golden brown, 3-5 minutes. Flip and cook until the other sides are golden brown and the sausages are cooked through for another 2-3 minutes, or until the internal temperature reaches 165°F with an instant-read thermometer. Serve garnished with fresh parsley.
