Ingredients

  • 4 ripe tomatoes, sliced into 1/2-inch slices
  • 4 tablespoons mayonnaise, or sour cream
  • ½ cup of grated Parmesan cheese
  • ½ cup Panko breadcrumbs
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon chopped fresh basil
  • ½ cup of fresh, shredded mozzarella cheese

Process

  1. Gather all ingredients. Preheat oven to 350°F (175°C).
  2. Arrange tomato slices in a single layer on a baking sheet lined with parchment paper.
  3. In a small bowl, mix mayonnaise, Parmesan, panko breadcrumbs, and Dijon mustard, then add oregano, salt, and pepper to taste.
